Ingredients
- 1 cup of lentils
- 4 cups of vegetable broth
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 tsp of cumin
- 1 tsp of paprika
- 1/2 tsp of turmeric
- Salt and pepper to taste
- 1 tbsp of olive oil
- Fresh parsley for garnish
Instructions

Rinse lentils and set aside.

In a large pot, sauté onion and garlic in olive oil until fragrant.

Add carrots and celery; sauté for 5 minutes.

Add lentils, vegetable broth, and spices.

Bring to a boil, then reduce heat and let simmer for 30-35 minutes.
