How To Make Vegan Quinoa Salad
A refreshing and healthy salad packed with quinoa, veggies and a zesty dressing.
Serves:
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 small cucumber, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Juice of 2 lemons
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions

In a medium pot, bring the vegetable broth to a boil. Add quinoa, reduce heat to low and cover. Cook for 18-20 minutes or until quinoa is fully cooked. Fluff with a fork and set aside to cool.

In a large bowl, combine cooled quinoa, red bell pepper, yellow bell pepper, red onion, cucumber, parsley, and mint.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa and toss to combine.

Serve chilled.
