- 1 ½ cups canned pumpkin puree
- ½ cup full-fat coconut milk
- ½ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- ¼ tsp salt
- 1 pre-made vegan pie crust
Instructions

Preheat your oven to 350°F (175°C) and lightly grease a pie dish.

In a large bowl, whisk together the pumpkin puree, coconut milk, maple syrup, vanilla extract, pumpkin pie spice, and salt until smooth.

Pour the pumpkin mixture into the pie crust and spread it evenly.

Bake for 45 minutes or until the filling is set and the crust is golden brown.
