How To Make Vegan Zucchini Noodle Stir-Fry
A colorful and healthy stir-fry recipe made with zucchini noodles, crispy veggies, and flavorful seasonings.

Ingredients
- 4 medium zucchinis, spiralized
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, thinly sliced
- 4 cloves of garlic, minced
- 1 tbsp of grated ginger
- 2 tbsp of soy sauce
- 1 tbsp of sesame oil
- 1 tbsp of rice vinegar
- 1 tsp of maple syrup
- 1/4 tsp of red pepper flakes
- 2 tbsp of chopped scallions
Instructions

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, and red pepper flakes. Set aside.

Heat a large pan over medium-high heat. Add a splash of oil and sauté onion, garlic, and ginger for 2-3 minutes or until fragrant.

Add bell peppers to the pan and stir-fry for 3-4 minutes or until they start to soften.

Push veggies to one side of the pan and add zucchini noodles. Stir them around for 2-3 minutes or until they are just tender.

Pour the sauce over the veggies and stir everything until well-coated and heated through.

Divide stir-fry among 4 serving plates and sprinkle with chopped scallions.
