How To Make Vegan Nut Roast
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 1 cup mixed nuts (e.g., walnuts, almonds, cashews)
- 1 cup cooked quinoa
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 tablespoon ground flaxseed mixed with 3 tablespoons of water (flax “egg”)
- 2 tablespoons nutritional yeast
- 1 tablespoon soy sauce or tamari
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F) and grease a loaf pan.

In a food processor, pulse the mixed nuts until roughly chopped.

In a large bowl, combine the chopped nuts, cooked quinoa, breadcrumbs, onion, garlic, carrot, celery, flax “egg”, nutritional yeast, soy sauce, parsley, salt, and pepper. Mix well.

Transfer the mixture to the greased loaf pan and press it down evenly.

Bake in the preheated oven for 1 hour or until the top is golden brown and firm.

Remove from the oven and let it cool for a few minutes before slicing and serving.
