Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp flour
- 2 cups unsweetened almond milk
- 1 tsp dijon mustard
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 1/2 tsp salt
- 1 can artichoke hearts, drained and chopped
- 4 cups baby spinach
- 1/2 cup bread crumbs
Instructions

Preheat oven to 375 F.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.

Sprinkle flour over the onions, stir constantly for 2 minutes.

Add almond milk, dijon mustard, black pepper, cayenne pepper, and salt, cook for 5 minutes, stirring constantly with a whisk.

Add artichoke hearts and spinach, mix to combine.

Transfer the mixture into a baking dish, sprinkle bread crumbs on top.

Bake for 25 minutes or until the top is golden brown.
