How To Make Vegan Potato Casserole Recipe
This creamy potato casserole is a satisfying and healthy vegan comfort food that’s perfect for dinner or brunch.
Serves:
Ingredients
- 2 lbs potatoes, peeled and sliced
- 3 tbsp vegan butter
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp flour
- 2 cups unsweetened almond milk
- 1/4 tsp nutmeg
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup vegan cheddar cheese, shredded
- 2 tbsp chopped fresh parsley
Instructions

Preheat the oven to 375°F.

Boil the sliced potatoes for 5-7 minutes or until they are soft. Drain.

In a large skillet, sauté the onions until they are translucent and soft.

Add the minced garlic and sauté for another minute.

Add vegan butter to the skillet and melt.

Add flour to the skillet and whisk for 1-2 minutes until the mixture is smooth.

Add almond milk, nutmeg, smoked paprika, salt and pepper to the skillet and whisk until the mixture is smooth.

Bring the mixture to a boil and then reduce to a simmer for 5 minutes.

Add vegan cheddar cheese to the skillet and stir until it melts.

In a casserole dish, layer half of the sliced potatoes followed by half of the cheese sauce. Repeat until all the potatoes and cheese sauce are used up.

Cover the casserole dish with foil and bake in the oven for 30 minutes.

Remove the foil and bake for another 10-15 minutes or until the top of the casserole is golden brown.

Garnish with chopped fresh parsley.
