How To Make Vegan Mushroom Casserole Recipe
A savory, satisfying casserole made with mushrooms and vegan cheese.
Serves:
Ingredients
- 1 lb of sliced mushrooms
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- 1/2 cup of vegetable broth
- 1/2 cup of vegan cream cheese
- 1/4 cup of vegan Parmesan cheese
- Salt and pepper, to taste
- 8 oz of pasta, cooked
Instructions

Preheat oven to 375 degrees F.

In a large skillet, sauté the mushrooms, onions, and garlic in olive oil until softened.

Add the vegetable broth and simmer until most of the liquid has evaporated.

Add the vegan cream cheese, vegan Parmesan cheese, salt, and pepper to the mushroom mixture and stir until melted and combined.

Add the cooked pasta and stir until coated with the mushroom sauce.

Transfer the mixture to an oven-safe casserole dish and bake for 20-25 minutes or until heated through and bubbling.
