How To Make Vegan Lentil Casserole Recipe
A hearty and flavorful lentil casserole that is vegan-friendly and perfect for colder weather.
Serves:
Ingredients
- 1 cup of dry lentils, rinsed and drained
- 2 cups of vegetable broth
- 1 can of diced tomatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 stalks of celery, chopped
- 1 tsp of cumin
- 1 tsp of smoked paprika
- salt and pepper to taste
- 2 tbsp of olive oil
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, mix together the lentils, vegetable broth, diced tomatoes, onion, garlic, carrots, celery, cumin, smoked paprika, salt, and pepper.

Pour mixture into a 9×13 inch baking dish and spread evenly.

Drizzle the olive oil over the top.

Cover with foil and bake for 35 minutes.

Remove foil and bake for an additional 20 minutes or until lentils are tender and casserole is heated through.
