Sweet and savory glazed eggplants that melt in your mouth.

Ingredients
- 2 medium sized eggplants, sliced
- 2 tbsp sesame oil
- 1 tbsp garlic, minced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 2 tbsp honey
- 2 tbsp scallions, chopped
Instructions

Preheat oven to 400°F (200°C).

Arrange eggplant slices on a baking sheet and brush with sesame oil.

Bake for 15-20 minutes, until eggplants are soft.

In a small saucepan, combine garlic, soy sauce, brown sugar, rice vinegar, and honey. Cook over medium heat until sugar has dissolved, stirring constantly.

Brush the sauce over the eggplants and bake for an additional 5-10 minutes.

Garnish with scallions and serve hot.
