How To Make Vegan Paella
A flavorful and satisfying vegan twist on the classic Spanish rice dish, packed with vegetables and aromatic spices.
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup green beans, trimmed and halved
- 1 cup diced tomatoes
- 1 cup vegetable broth
- 1 cup white rice
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp saffron threads (optional)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, for garnish
- Lemon wedges, for serving
Instructions
-
Heat olive oil in a large pan or paella pan over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.
-
Add sliced red and yellow bell peppers, and green beans. Cook for 5 minutes until slightly tender.
-
Stir in diced tomatoes, vegetable broth, white rice, smoked paprika, turmeric, and saffron threads (if using). Season with salt and black pepper.
-
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked and has absorbed the liquid. Stir occasionally to prevent sticking.
-
Remove from heat and let it sit, covered, for 5 minutes to allow the flavors to meld. Fluff the rice with a fork.
-
Garnish with fresh parsley and serve hot with lemon wedges.
