Ingredients
- 1 prepared pie crust
- 1/2 cup lemon curd
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1 vanilla bean, seeds scraped out
- 2 large eggs
- Pinch of salt
Instructions

Preheat the oven to 375°F.

Roll out the pie crust and place it in a 9-inch tart pan. Trim the edges and prick the bottom with a fork.

Bake the crust for 12-15 minutes or until lightly golden. Remove from oven and let cool.

In a medium bowl, whisk together the lemon curd, heavy cream, sugar, vanilla bean seeds, eggs, and salt until smooth.

Pour the filling into the cooled crust and bake for 30-35 minutes or until set and golden.
