Ingredients
- 1 cup mashed sweet potato
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
Instructions

Preheat oven to 375°F (190°C).

In a large mixing bowl, cream together butter, brown sugar, and granulated sugar.

Add in the sweet potato, egg, and vanilla extract, mixing until combined.

In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Scoop dough onto a baking sheet lined with parchment paper, spacing evenly apart.

Bake for 10-12 minutes until the edges are lightly golden.

Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
