How To Make Sweet Potato and Coconut Soup
A creamy and flavorful soup made with sweet potatoes and coconut milk.

Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp curry powder
- 4 cups vegetable broth
- Salt and pepper to taste
- Coconut flakes, for garnish
- Fresh cilantro, for garnish
Instructions

In a large pot, sauté the onion, garlic, and ginger until fragrant.

Add the sweet potatoes, curry powder, and vegetable broth. Bring to a boil and simmer until sweet potatoes are tender.

Use an immersion blender or transfer the mixture to a blender and blend until smooth.

Stir in the coconut milk and season with salt and pepper.

Simmer for another 5 minutes to heat through.

Serve hot, garnished with coconut flakes and fresh cilantro.
