Ingredients
- 1 cup long-grain rice
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Cook the rice according to package instructions and set aside.

Heat olive oil in a large skillet over medium heat. Add onion, garlic, red bell pepper, and jalapeno pepper. Cook until vegetables are softened.

Stir in the chili powder, paprika, and cayenne pepper. Cook for an additional minute.

Add the diced tomatoes (with their juice) and vegetable broth. Bring to a simmer.

Stir in the cooked rice, season with salt and pepper to taste, and cover. Cook for 10 minutes, allowing the flavors to meld together.

Remove from heat and let the rice sit, covered, for an additional 5 minutes.

Fluff the rice with a fork and garnish with fresh cilantro before serving.
