How To Make Spicy Pumpkin Soup
A flavorful and spicy pumpkin soup that will warm you up on a cold day.
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tsp curry powder
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 2 cups pumpkin puree
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the curry powder, cayenne pepper, and ground cumin to the pot and cook for 1 minute, stirring constantly.

Add the pumpkin puree, vegetable broth, and coconut milk to the pot. Bring to a simmer and let cook for 20 minutes.

Use an immersion blender or a regular blender to blend the soup until smooth.

Season with salt and pepper to taste.

Serve the soup hot, garnished with fresh cilantro.
