How To Make Smashed Roasted New Potatoes
These crispy roasted new potatoes are smashed to perfection, creating a deliciously tender and flavorful side dish.

Ingredients
- 1.5 pounds of new potatoes
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of dried rosemary
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Place the potatoes in a large pot with enough water to cover them. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.

Drain the potatoes and let them cool slightly. Place them on a baking sheet lined with parchment paper.

Use the bottom of a glass or a potato masher to gently press down on each potato to smash them.

In a small bowl, mix together the olive oil, minced garlic, dried rosemary, salt, and pepper. Drizzle this mixture over the smashed potatoes.
