- 1 1/2 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 2 tablespoons unsalted butter, melted
- Cooking spray or additional butter for greasing the skillet
- Cream cheese icing, for serving

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the buttermilk, milk, eggs, vanilla extract, red food coloring, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.

Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until cooked through.
