How To Make Red Lentil Soup
A warm and comforting soup made with red lentils, vegetables, and aromatic spices.
Serves:
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 tsp cumin
- 1 tsp paprika
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Rinse the red lentils under cold water and set aside.

In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the carrots and celery and cook for another 5 minutes.

Stir in the cumin and paprika, and cook for 1 minute.

Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Season with salt and pepper to taste.

Serve the soup hot, garnished with fresh cilantro.
