How To Make Raspberry & White Chocolate Scones

Fluffy scones with bursts of juicy raspberries and creamy white chocolate chunks.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup fresh raspberries
  • 1/2 cup white chocolate chunks
  • 3/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold butter to the bowl and cut it into the dry ingredients using a pastry cutter or your fingertips until it resembles coarse crumbs.

  4. Gently fold in the raspberries and white chocolate chunks.

  5. In a separate bowl, whisk together the milk and vanilla extract. Gradually add the milk mixture to the dry ingredients, stirring until just combined.

  6. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick circle.

  7. Cut the dough into 8 equal wedges and place them onto the prepared baking sheet.

  8. Bake for 18-20 minutes until golden brown.

  9. Allow the scones to cool on a wire rack before serving.
