- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a small bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
- In a large bowl, beat butter with brown sugar and granulated sugar until creamy.
- Add pumpkin puree, egg, and vanilla extract and beat until well combined.
- Gradually add the flour mixture to the pumpkin mixture and beat until just combined.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Using a cookie scoop, drop balls of pumpkin dough onto prepared baking sheets.
- Use the back of a spoon or your finger to make an indentation in each cookie.
- Fill each indentation with a spoonful of cream cheese mixture.
- Bake for 12-14 minutes, or until the edges are lightly browned.
- Let cool on baking sheets before serving.
