Ingredients
- 4 cups mixed root vegetables (carrots, parsnips, turnips, beets), cut into small cubes
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon black pepper
- 1/2 teaspoon salt

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the mixed root vegetables with olive oil, honey, black pepper, and salt until well coated.

Spread the vegetables evenly on the prepared baking sheet in a single layer.
