How To Make Pea & Mint Soup
A refreshing and vibrant soup made with peas and fresh mint leaves.
Serves:
Ingredients
- 2 cups frozen peas
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1/2 cup fresh mint leaves
- Salt and pepper, to taste
- 1/4 cup heavy cream
Instructions

In a large pot, heat some oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

Add the frozen peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

Add the fresh mint leaves and cook for another 2 minutes.

Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.

Season with salt and pepper to taste.

Stir in the heavy cream and heat the soup gently until warmed through.

Serve hot with a garnish of fresh mint leaves.
