How To Make Low Carb Ratatouille Recipe
A classic French vegetable stew made with low carb ingredients.

Ingredients
- 1 onion, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, chopped
- 1 eggplant, diced
- 3 garlic cloves, minced
- 1/2 cup tomato sauce
- 2 tbsp olive oil
- 1 tsp dried basil
- Salt and black pepper to taste
Instructions

Preheat oven to 375°F.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Add peppers, zucchini, and eggplant, and cook for 5-7 minutes, until slightly soft.

Add tomato sauce, dried basil, salt, and pepper. Stir well and cook for another 5 minutes.

Transfer the mixture to an oven-safe dish and bake for 25-30 minutes, until vegetables are fully cooked.
