How To Make Low Carb Tomato Soup Recipe
A creamy and delicious tomato soup that is low in carbs and perfect for a healthy meal.
Serves:
Ingredients
- 2 tbsp of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 cans of chopped tomatoes, drained (28 oz each)
- 2 cups of chicken or vegetable broth
- 1 tbsp of dried basil
- Salt and pepper to taste
- 1 cup of heavy cream
Instructions

In a medium-sized pot, heat up the olive oil on medium heat.

Add in the chopped onions and garlic and cook until onions are translucent.

Add in the chopped tomatoes, chicken or vegetable broth, dried basil, salt, and pepper. Bring to a boil.

Reduce the heat to low and simmer for 20 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in the heavy cream and heat again for a few minutes until heated through.
