Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 stalks celery, chopped
- 2 large carrots, chopped
- 4 cups chicken broth
- 1 lb boneless, skinless chicken breasts, diced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.

Add celery and carrots and sauté for another 5 minutes.

Pour in chicken broth and bring to a simmer.

Add chicken, thyme, rosemary, salt, and pepper. Simmer until chicken is cooked through, about 20 minutes.

Serve hot, garnished with fresh parsley.
