How To Make Low Carb Chicken Soup Recipe

A comforting, low-carb soup filled with tender chicken and veggies.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 large carrots, chopped
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.

  2. Add celery and carrots and sauté for another 5 minutes.

  3. Pour in chicken broth and bring to a simmer.

  4. Add chicken, thyme, rosemary, salt, and pepper. Simmer until chicken is cooked through, about 20 minutes.

  5. Serve hot, garnished with fresh parsley.
