How To Make Low Carb Cabbage Soup Recipe

A hearty, low carb soup loaded with cabbage, vegetables and spices.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 small cabbage, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic, sauté for 2-3 minutes until fragrant.

  3. Add cabbage, carrots, and celery. Sauté for 5-7 minutes until vegetables are slightly tender.

  4. Pour in chicken/vegetable broth.

  5. Stir in bay leaf, dried thyme, and paprika.

  6. Bring soup to a boil, reduce heat and let simmer for 20-25 minutes or until all vegetables are tender.

  7. Taste and adjust seasoning with salt and pepper.

  8. Serve hot and enjoy!
