How To Make Low Carb Cabbage Soup Recipe
A hearty, low carb soup loaded with cabbage, vegetables and spices.
Serves:
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 small cabbage, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium heat.

Add onion and garlic, sauté for 2-3 minutes until fragrant.

Add cabbage, carrots, and celery. Sauté for 5-7 minutes until vegetables are slightly tender.

Pour in chicken/vegetable broth.

Stir in bay leaf, dried thyme, and paprika.

Bring soup to a boil, reduce heat and let simmer for 20-25 minutes or until all vegetables are tender.

Taste and adjust seasoning with salt and pepper.
