Ingredients
- 1 lb large shrimp
- 1/2 cup coconut flour
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 2 eggs
- 1 cup unsweetened shredded coconut
- Cooking Spray
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Peel and devein shrimp, leaving the tails intact.

In a small bowl, mix together the coconut flour, paprika, garlic powder, and salt. In another small bowl, whisk the eggs.

Dip each shrimp into the coconut flour mixture, shaking off any excess, then dip it into the eggs and finally coat it in the shredded coconut mixture.

Place the coated shrimp onto the prepared baking sheet and spray with cooking spray.

Bake for 12-15 minutes or until the shrimp is cooked and the coating is golden brown.

Serve hot with your favorite dipping sauce.
