These lettuce wraps are a low carb and high protein meal option perfect for a quick and healthy lunch or dinner.

Ingredients
- 1 lb. ground beef
- 1 head of lettuce, separated into leaves
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tbsp. soy sauce
- 1 tbsp. rice vinegar
- 1 tsp. sesame oil
- 1 tsp. ginger powder
- salt and pepper, to taste
Instructions

In a large skillet over medium heat, cook the ground beef, breaking it up as it cooks. Season with salt and pepper.

Add the diced onion, garlic, and red bell pepper to the skillet and sauté until softened, about 5 minutes.

Add soy sauce, rice vinegar, sesame oil, and ginger powder to the skillet and stir to combine. Simmer for an additional 2-3 minutes.

Remove the skillet from heat and let cool.

Wash and separate the lettuce leaves, pat them dry.

Spoon a few tablespoons of the beef mixture onto each lettuce leaf.
