Tender beef pot roast with savory low-carb vegetables

Ingredients
- 2 lb beef chuck roast
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 2 garlic cloves, minced
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

Preheat oven to 325°F

Heat olive oil in a pan on medium-high heat.

Once hot, add the beef roast and brown it on both sides.

Remove the beef roast and place it in a slow cooker.

Sauté the onion, celery, carrots, and garlic along with the thyme and rosemary for a few minutes until they are slightly softened.

Add the beef broth, tomato paste, and Worcestershire sauce to the vegetables and stir to combine.

Pour the vegetable mixture over the beef roast in the slow cooker.

Cover and cook on low for 6 hours or until the beef is tender and falls apart easily.

Serve hot with low-carb vegetables on the side.
