Ingredients
- 1 lb of boneless chicken breast
- 3 cups of chicken broth
- 1 cup of chopped celery
- 1 cup of chopped carrots
- 1 cup of chopped onion
- 2 cloves of minced garlic
- 1 tbsp of olive oil
- 1 tsp of dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a pot over medium heat.

Add minced garlic and cook for 1 minute.

Add chicken broth, chicken breast, celery, carrots, onion, dried thyme, salt, and pepper to the pot.

Bring to a boil and then reduce heat to a simmer.

Simmer for 20-25 minutes, or until chicken is cooked through and vegetables are tender.

Shred the chicken breast and put back into the soup.

Serve hot.
