Ingredients
- 4 chicken breasts, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp of olive oil
- 1 can of full-fat coconut milk
- 2 tbsp of curry powder
- 1 tsp of turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a large pan or pot, heat the olive oil over medium-high heat.

Add the garlic and onion and sauté for 2-3 minutes until translucent.

Add the diced chicken and cook until browned on all sides.

Add the curry powder, turmeric, salt, and pepper, and stir to combine.

Pour in the coconut milk and bring to a simmer.

Reduce the heat and let the curry simmer for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
