How To Make Low Carb Beef Stew Recipe
A hearty and comforting stew made with tender beef and low carb vegetables.
Serves:
Ingredients
- 1.5 lbs beef stew meat, diced
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 3 carrots, sliced
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp paprika
- 1 bay leaf
- 4 cups beef broth
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium-high heat.

Add beef stew meat, season with salt and pepper, and cook until browned on all sides.

Add onions, garlic, celery and carrots to the pot and cook until vegetables are softened.

Add in tomato paste, thyme, rosemary, paprika, and a bay leaf. Stir to combine.

Pour in beef broth and bring to a boil.

Reduce heat to low, cover and simmer for 1 1/2 to 2 hours, or until beef and vegetables are tender.

Remove bay leaf and serve hot.
