Ingredients
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup erythritol
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp cream of tartar
- 1/8 tsp salt
- 1/3 cup butter, softened
- 1 egg
- 1 tsp vanilla extract
Instructions

Preheat oven to 350°F.

In a medium bowl, combine almond flour, coconut flour, erythritol, cinnamon, baking soda, cream of tartar, and salt.

In a separate bowl, beat butter until creamy. Add in egg and vanilla extract. Mix until well combined.

Gradually add dry ingredients to the butter mixture. Mix until a dough forms.

Using a cookie scooper, form dough into balls and roll in mixture of cinnamon and erythritol.

Place on a baking sheet lined with parchment paper.

Bake for 10-12 minutes or until the edges are slightly browned.

Allow to cool for a few minutes before serving.
