Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup erythritol
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp cream of tartar
  • 1/8 tsp salt
  • 1/3 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. In a medium bowl, combine almond flour, coconut flour, erythritol, cinnamon, baking soda, cream of tartar, and salt.

  3. In a separate bowl, beat butter until creamy. Add in egg and vanilla extract. Mix until well combined.

  4. Gradually add dry ingredients to the butter mixture. Mix until a dough forms.

  5. Using a cookie scooper, form dough into balls and roll in mixture of cinnamon and erythritol.

  6. Place on a baking sheet lined with parchment paper.

  7. Bake for 10-12 minutes or until the edges are slightly browned.

  8. Allow to cool for a few minutes before serving.
