Serves:
Ingredients
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/4 cup unsalted butter, room temperature
- 1 egg
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tbsp poppy seeds
Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a medium bowl, whisk almond flour, coconut flour, erythritol, baking powder and salt.

In a separate bowl or stand mixer, beat butter until light and fluffy.

Add egg, lemon juice and lemon zest to the butter and mix well.

Add dry ingredients to the wet mixture and mix until well combined.

Fold in poppy seeds.

Using a cookie scoop, drop dough onto the baking sheet and flatten with the back of a spoon.

Bake for 12 minutes or until edges start to turn golden brown.

Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
