Ingredients
- 2 cups almond flour
- 1/4 cup butter, softened
- 1/4 cup powdered Erythritol sweetener
- 1 egg
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions

Preheat the oven to 350°F.

In a mixing bowl, cream the softened butter with the powdered sweetener.

Beat in the egg and vanilla extract.

In a separate bowl, mix the almond flour, baking soda, and salt.

Slowly add the dry mixture to the wet mixture and stir until fully incorporated.

Scoop cookie dough by the tablespoonful and place on a baking sheet lined with parchment paper

Bake for 12-15 minutes or until the cookies are golden on the edges and firm to the touch.

Cool for at least 5 minutes on the tray before transferring to a wire rack.
