How To Make Thai Coconut Soup Recipe
A creamy soup made with coconut milk, lemongrass, ginger, and chicken or tofu. Aromatic and flavorful with a hint of spice.

Ingredients
- 1 lemongrass stalk, bruised
- 1 inch ginger, sliced
- 2 garlic cloves, minced
- 1 red chili, sliced
- 2 cups chicken broth
- 1 can (400ml) coconut milk
- 1 tbsp fish sauce
- 1 lime, juiced
- 1 cup sliced chicken or cubed tofu
- 1 cup sliced mushrooms
- 1/4 cup chopped cilantro
Instructions

In a large pot, combine lemongrass, ginger, garlic, chili, and chicken broth. Bring to a boil and let simmer for 10 minutes.

Add in coconut milk, fish sauce, and lime juice. Stir well and add in chicken or tofu and mushrooms. Cook for 10-15 minutes until chicken is cooked through or tofu is heated.

Remove lemongrass and ginger slices and stir in cilantro.

Serve hot with additional chili slices and lime wedges.
