- 4 bell peppers (any color)
- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup cauliflower rice
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Preheat the oven to 375°F (190°C). Line a baking dish with foil.

Slice the tops off the bell peppers and remove the seeds and membranes.

In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is soft and translucent.

Stir in the cauliflower rice, Italian seasoning, salt, and pepper. Cook for an additional 3-4 minutes until the cauliflower rice is tender.

Spoon the beef mixture into the hollowed-out bell peppers. Place the peppers in the prepared baking dish.
