How To Make One-pot Chicken, Pumpkin & Pepper Rice

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 chicken breasts, diced
- 1 cup pumpkin, diced
- 1 bell pepper, diced
- 2 cups white rice
- 4 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp turmeric
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened.

Add chicken and cook until browned on all sides.

Stir in pumpkin, bell pepper, rice, chicken broth, salt, pepper, paprika, and turmeric. Bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes before fluffing with a fork.

Serve hot and enjoy!
