How To Make Keto Smothered Chicken Thighs Recipe

Ingredients
- 4 chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Season the chicken thighs with salt and pepper.

In a large oven-safe skillet, heat the olive oil over medium heat. Add the chicken thighs and cook for 4-5 minutes per side until browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened.

Add the chicken broth, heavy cream, Dijon mustard, and thyme leaves to the skillet. Stir well to combine and bring to a simmer.

Return the chicken thighs to the skillet, nestling them into the sauce. Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.

Bake for 20-25 minutes until the chicken is cooked through and the sauce has thickened.

Remove from the oven and let the chicken rest for a few minutes before serving.

Garnish with fresh parsley and serve hot.
