Ingredients
- 4 chicken breasts, boneless and skinless
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp olive oil
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

Place the chicken breasts between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.

Season both sides of the chicken breasts with salt, black pepper, and garlic powder.

Heat the olive oil in a large skillet over medium-high heat.

Cook the chicken breasts for 2-3 minutes on each side, until they are golden brown and cooked through.

While the chicken is cooking, prepare the salad by combining the mixed greens, cherry tomatoes, and red onion in a large bowl.

In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to make the dressing.
