How To Make Chicken and Olives
Serves:
Ingredients
- 4 chicken breast fillets
- 1/2 cup green olives, pitted
- 1/2 cup black olives, pitted
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cup chicken broth
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt, pepper, paprika, dried oregano, and dried thyme.

Heat olive oil in a large oven-safe skillet over medium-high heat.

Brown the chicken breasts on both sides, about 2-3 minutes per side. Remove from the skillet and set aside.

In the same skillet, add diced onions and minced garlic. Cook until softened, about 2-3 minutes.

Add the green olives, black olives, and chicken broth to the skillet. Stir well to combine.

Return the chicken breasts to the skillet and spoon some of the olive mixture over the top.

Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.

Bake for 30-35 minutes or until the chicken is cooked through and no longer pink in the center.

Serve the chicken and olives with the sauce from the skillet.
