- 1 whole chicken (about 3 lbs), rinsed and patted dry
- 2 tbsp olive oil
- 1 tbsp dried thyme
- 1 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, quartered
Instructions

Preheat oven to 400°F.

Rub the chicken with olive oil, making sure to coat it evenly.

In a small bowl, mix together the thyme, garlic powder, salt, and black pepper.

Rub the seasoning mixture all over the chicken, making sure to coat it evenly.

Stuff the quartered lemon inside the chicken cavity.

Place the chicken on a roasting pan, breast side up.

Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F.
