How To Make Jammy Blackberry & Almond Crumble Cake
A delicious and fruity cake with a jammy blackberry filling and a crunchy almond crumble topping.

Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup ground almonds
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup blackberry jam
- 1/4 cup sliced almonds, for topping
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 8-inch round cake pan.

In a mixing bowl, combine the flour, sugar, butter, ground almonds, baking powder, and salt. Mix until crumbly.

In a small bowl, whisk together the egg and vanilla extract. Add the egg mixture to the dry ingredients and mix until well combined.

Transfer two-thirds of the dough into the prepared cake pan and press it down evenly to form the base.

Spread the blackberry jam over the base, leaving a small border around the edges.

Crumble the remaining dough on top of the jam, and sprinkle with sliced almonds.

Bake in the preheated oven for 40 minutes, or until the top is golden brown and the jam is bubbling.

Remove from the oven and let cool before serving.
