Ingredients
- 8 oz. gluten-free spaghetti
- 2 tbsp. vegetable oil
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 3 green onions, thinly sliced
- 1/4 cup gluten-free soy sauce
- 2 tbsp. creamy peanut butter
- 2 tbsp. rice vinegar
- 1 tbsp. honey
- 1/2 tsp. red pepper flakes
- 1/4 cup roasted peanuts, chopped
- Fresh cilantro, chopped, for garnish
Instructions
- Cook spaghetti according to package instructions and set aside.
- In a large skillet, heat oil over medium-high heat. Add garlic and sauté for 30 seconds.
- Add red bell pepper and green onions, and cook until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, peanut butter, rice vinegar, honey, and red pepper flakes.
- Add spaghetti and sauce to skillet and toss to combine.
- Serve with chopped peanuts and cilantro on top.
