A flavorful and aromatic dish that combines the goodness of ginger, turmeric, and chicken in a delicious curry.

Ingredients
- 4 chicken breasts, cut into cubes
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp red chili flakes
- 1 cup chicken broth
- 1 can (14 oz) coconut milk
- 1 tbsp tomato paste
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Season chicken with salt and pepper. Heat olive oil in a large pan, add chicken and cook for 5-7 minutes until browned.

Remove chicken from pan and set aside. Add onion and garlic to the same pan and cook for 5 minutes until softened.

Add ginger, turmeric, cumin, coriander, and chili flakes. Cook for 1-2 minutes until fragrant.

Add chicken broth, coconut milk, tomato paste, and stir well.

Return chicken to the pan, reduce heat to low, and simmer for 15-20 minutes until chicken is cooked through and the sauce has thickened.

Garnish with fresh cilantro and serve over rice.
