How To Make Fluffy Buckwheat Pancakes
Light and fluffy pancakes made with nutritious buckwheat flour.

Ingredients
- 1 cup buckwheat flour
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- Maple syrup, for serving
Instructions

In a large bowl, whisk together the buckwheat flour, all-purpose flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs. Add the milk and melted butter and whisk until well combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix – lumps are okay.

Heat a non-stick skillet or griddle over medium heat. Spoon 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown.

Serve the pancakes warm with maple syrup.
