Ingredients
- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions

Preheat oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.

In a large bowl, mix together mashed bananas, sugar, vegetable oil, egg, and vanilla extract.

In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the banana mixture, stirring until just combined.

Fill muffin cups about three-quarters full with the batter.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
