Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1 egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 cup crystallized ginger, finely chopped
- 1/4 cup granulated sugar (for rolling)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the butter and brown sugar until light and fluffy.

Add the molasses and egg, and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and cloves.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the crystallized ginger.

Roll the dough into 1-inch balls, then roll each ball in the granulated sugar to coat.
