  • 1 cup pumpkin puree
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 cup erythritol
  • 2 tbsp stevia
  • 1 pre-made pie crust (sugar-free or gluten-free optional)

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together pumpkin puree, almond milk, eggs, cinnamon, ginger, cloves, salt, erythritol, and stevia until smooth.

  3. Pour mixture into the pre-made pie crust.

  4. Bake for 45 minutes until the filling is set and the crust is golden brown.

  5. Remove from oven and let cool completely before serving.
